While I was making some other things one day I ended up with a lot of Nilla Wafers I didn’t want to get stale before I had a use for them. As you can see this isn’t a fancy presentation since it was just on a whim and I didn’t do a great job since I was just playing around.
I took 2 wafers and sandwiched them with some peanut butter. You can also make some peanut butter fudge using less powdered sugar to make a sweet creamy filling. I have the recipe below.
Now, take a bag of red melting chocolates and microwave for 1 minute, stir and microwave another 15-30 seconds till all the chocolate is melted. Take a fork and dip your Nilla Wafer sandwich in the chocolate, tap the side of the bowl to remove excess chocolate and place on wax paper. Continue to do that with the rest of your cookies. Let those set.
Take black melting chocolates and put in an unsealed Ziplock bag. Microwave for 1 minute, seal the bag, knead the bag then microwave for another 15-30 seconds. Be careful that the bag isn’t too hot. Your chocolate should never be really hot so you may need to knead more and microwave less. Snip a small corner from the bag. Start by taking a tiny tip off the end and squeeze a test on your wax paper. You can always snip off more if you need to. Make a line down the middle of each cookie. Add a dot for the face and several more for the dots on the ladybugs back. Take some white melting chocolate in a Ziplock bag and melt, snip off the corner of the bag and make the dots for the eyes. That’s it!!
Other options for these are to just use one wafer and no filling. You can also use Nutella for the filling or cake icing. It’s all a matter of taste!
Peanut Butter Fudge
- 1 cup butter
- 1 cup peanut butter
- 1 teaspoon vanilla extract
- 1 pound powdered sugar (I use half of this when making a filling)
Take a microwave safe bowl and add your butter and peanut butter, cover with clear wrap and microwave on high for 2 minutes. Carefully lift the clear wrap (watch for hot steam) and stir the butter/peanut butter mixture. Replace the clear wrap and microwave another 2 minutes. Remove from the microwave, take off the clear wrap and stir in the vanilla and powder sugar to combine. As you mix it will become thicker. You can put this on wax paper and pat into a square or in a pan (lined with clear wrap) or even candy molds. Once it’s cool and firm cut into squares or use cookie cutters.
